Es muy utilizada para la perfumer\u00eda y la industria alimentaria, de hecho, para ambos usos el contenido de vainillina en el extracto final es uno de los  principales objetivos al final del proceso de extracci\u00f3n. Por lo tanto, la <strong>concentraci\u00f3n de vainillina <\/strong>determina el costo de los extractos.<\/p>\n\n\n\n<p>Hoy en d\u00eda existen tecnolog\u00edas emergentes que utilizan la destrucci\u00f3n celular f\u00edsica o qu\u00edmica. En consecuencia, estas t\u00e9cnicas se combinan con las tradicionales no solo con el objetivo de <strong>optimizar el rendimiento <\/strong>en la extracci\u00f3n de vainillina sino tambi\u00e9n para garantizar la <strong>calidad final<\/strong> de los extractos y aumentar el precio de venta.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/horti-generation.com\/wp-content\/uploads\/2019\/09\/1-P1040904-1024x635.jpg\" alt=\"\"\/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h2>Tecnolog\u00eda de extracci\u00f3n convencional<\/h2>\n\n\n\n<p>Las compa\u00f1\u00edas de saborizantes, especialmente las de la industria alimentaria, utilizan extracci\u00f3n con solvente alcoh\u00f3lico. En realidad, estandarizan su proceso con<strong> temperatura espec\u00edfica<\/strong> (T\u1d52), <strong>concentraci\u00f3n de solvente<\/strong> (% v \/ v) y en algunos casos la <strong>presi\u00f3n correcta<\/strong> (Pa). Adem\u00e1s, el porcentaje de humedad en las vainas de vainilla curadas, el <strong>grado<\/strong> (A o B) y la <em>variedad<\/em> se consideran los factores que podr\u00edan cambiar las condiciones de la extracci\u00f3n, as\u00ed como el rendimiento de la vainillina en el producto final.<\/p>\n\n\n\n<h4> Advantages of conventional extraction: <\/h4>\n\n\n\n<ul><li>Extractos suaves con una gran cantidad de mol\u00e9culas aromatizantes (para extracciones fr\u00edas)<\/li><li>Barato para instalar y operar<\/li><\/ul>\n\n\n\n<h4>Desventajas de la extracci\u00f3n convencional: <\/h4>\n\n\n\n<ul><li>Consumo de tiempo y energ\u00eda (de d\u00edas a semanas dependiendo de la temperatura)<\/li><li> P\u00e9rdida parcial y degradaci\u00f3n de algunas mol\u00e9culas vol\u00e1tiles (para extracci\u00f3n a alta temperatura)<\/li><li> Proceso de extracci\u00f3n grande y laborioso.<\/li><li> Fracci\u00f3n pobre de vainillina en el extracto final<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/horti-generation.com\/wp-content\/uploads\/2019\/12\/Extraits-de-vanille-1024x506.jpg\" alt=\"\"\/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h2>Tecnolog\u00edas de extracci\u00f3n emergentes<\/h2>\n\n\n\n<p>A pesar de las ventajas de las <strong>tecnolog\u00edas de extracci\u00f3n emergentes<\/strong>, el costo de inversi\u00f3n y el requisito de personas calificadas para administrarlas, hacen que solo unas pocas empresas puedan usarlas en sus procesos.<\/p>\n\n\n\n<p>A continuaci\u00f3n se listan los procesos m\u00e1s comunes utilizados en laboratorio y escala industrial:<\/p>\n\n\n\n<h4> &#8211; Extracci\u00f3n asistida por microondas (MAE por sus siglas en ingl\u00e9s): <\/h4>\n\n\n\n<p>MAE se considera la tecnolog\u00eda emergente m\u00e1s utilizada por los industriales. La intensidad (<strong>W<\/strong>) y la frecuencia (<strong>KHz<\/strong>) de las microondas afectan directamente a las vainas de vainilla, mejorando los compuestos arom\u00e1ticos en el solvente y por ende en el extracto final.<\/p>\n\n\n\n<h4>&#8211; Extracci\u00f3n asistida por ultrasonido (EAU  por sus siglas en ingl\u00e9s):<\/h4>\n\n\n\n<p>Esta tecnolog\u00eda puede mejorar la tasa de extracci\u00f3n y el aroma si se combina con la concentraci\u00f3n correcta de solvente. El ultrasonido funciona creando un fen\u00f3meno de cavitaci\u00f3n responsable de destruir la estructura celular de los granos de vainilla, mejorando as\u00ed la cantidad de mol\u00e9culas de sabor. Asimismo, las condiciones como frecuencia (<strong>KHz<\/strong>), intensidad (<strong>W \/ cm2<\/strong>) y tiempo (<strong>segundos<\/strong>) pueden determinar la calidad del extracto final. <\/p>\n\n\n\n<h4>Extracci\u00f3n de fluidos supercr\u00edticos (SFE por sus siglas en ingl\u00e9s):<\/h4>\n\n\n\n<p>La extracci\u00f3n de fluido supercr\u00edtico es la m\u00e1s cara de las tecnolog\u00edas emergentes, tambi\u00e9n se considera como una de las mol\u00e9culas m\u00e1s limpias y precisas en t\u00e9rminos de aroma. De hecho, es un <em><strong>proceso de alta presi\u00f3n <\/strong><\/em>que utiliza di\u00f3xido de Carbone (<strong>CO2<\/strong>) a condiciones de temperatura y presi\u00f3n supercr\u00edticas. Por lo tanto, los extractos de SFE se consideran 100% libres de solventes qu\u00edmicos. Adem\u00e1s, se pueden obtener dos tipos diferentes de extractos, ambos con alta concentraci\u00f3n de vainillina (<strong>> 12%<\/strong>).<\/p>\n\n\n\n<h2>Conclusi\u00f3n <\/h2>\n\n\n\n<p>El uso de <strong>tecnolog\u00edas de extracci\u00f3n emergentes<\/strong> podr\u00eda ser una buena soluci\u00f3n para la industria de aromatizantes. A pesar del mayor costo de inversi\u00f3n, estas tecnologias (especialmente SFE) permite obtener <strong>extractos m\u00e1s puros<\/strong> que son m\u00e1s caros en el mercado.
