Ce n&#8217;est plus le cas. Les indemnit\u00e9s de s\u00e9cheresse vers\u00e9es aux fermes par la Financi\u00e8re agricole ont quintupl\u00e9 en cinq ans (Le Devoir), et dans des secteurs mara\u00eechers comme la Mont\u00e9r\u00e9gie, la nappe baisse au point que des puits et des \u00e9tangs d&#8217;irrigation se vident en pleine saison (Radio-Canada). Pour les <strong>producteurs de fraises et de framboises<\/strong>, l&#8217;approvisionnement en eau est devenu l&#8217;un des plus grands d\u00e9fis, au m\u00eame titre que la main-d&#8217;oeuvre (Association des producteurs de fraises et framboises du Qu\u00e9bec).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Le signal n&#8217;est pas propre au Qu\u00e9bec. L&#8217;Ouest am\u00e9ricain traverse sa p\u00e9riode de 22 ans la plus s\u00e8che depuis au moins 1200 ans (Williams et al., 2022), et le sud de l&#8217;Europe encha\u00eene les restrictions d&#8217;irrigation \u00e9t\u00e9 apr\u00e8s \u00e9t\u00e9. Pour un producteur, la s\u00e9cheresse n&#8217;est plus un risque d&#8217;ann\u00e9e exceptionnelle \u00e0 absorber. C&#8217;est une menace structurelle, et elle rel\u00e8ve davantage de la conception que de la m\u00e9t\u00e9o. Un grand tunnel, pens\u00e9 autour de la bonne irrigation et du bon stockage d&#8217;eau, transforme une ressource incertaine en ressource ma\u00eetris\u00e9e. Cela vaut pour les petits fruits comme pour le mara\u00eechage.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2><strong>Chaque goutte compte : le goutte-\u00e0-goutte comme base<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<p>Quand l&#8217;eau se rar\u00e9fie, la <strong>pr\u00e9cision de l&#8217;application<\/strong> est le premier levier \u00e0 activer. Elle avoisine 90 pour cent au goutte-\u00e0-goutte, contre environ 75 pour cent \u00e0 l&#8217;aspersion et 60 pour cent en irrigation de surface (FAO). Un producteur qui passe du sillon ou de l&#8217;aspersion au goutte-\u00e0-goutte r\u00e9duit g\u00e9n\u00e9ralement sa consommation d&#8217;eau de 30 \u00e0 60 pour cent (FAO). Sous tunnel, l&#8217;humidit\u00e9 se pilote finement, et cette pr\u00e9cision se lit directement dans la qualit\u00e9 du fruit. Encore faut-il concevoir le syst\u00e8me pour le site: espacement des goutteurs selon la texture du sol, injection d&#8217;engrais avec contr\u00f4le du pH, filtration, et la gestion de la salinit\u00e9 qui compte davantage chaque ann\u00e9e \u00e0 mesure que la nappe descend. Les \u00e9conomies d&#8217;eau viennent de trois leviers distincts, et il vaut mieux les garder s\u00e9par\u00e9s.<br>La structure elle-m\u00eame abaisse l&#8217;\u00e9vapotranspiration et le besoin en eau de la culture. Sous grand tunnel, la tomate et le poivron ont consomm\u00e9 environ 15 % d&#8217;eau de moins qu&#8217;en plein champ (Rho et al., 2020), et les abris procurent un gain de productivit\u00e9 de l&#8217;eau sup\u00e9rieur sous irrigation d\u00e9ficitaire (Nazari et al., 2021).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Le <strong>substrat et la pr\u00e9cision<\/strong> resserrent encore le compte. Il faut environ 72 litres d&#8217;eau pour produire un kilo de fraises fra\u00eeches en hors-sol (Cardoso et al., 2021). La fertigation pilot\u00e9e par capteurs a augment\u00e9 l&#8217;efficience d&#8217;utilisation de l&#8217;eau de 46 pour cent par rapport \u00e0 une simple minuterie (Bonelli et al., 2024), et un d\u00e9ficit hydrique l\u00e9ger et contr\u00f4l\u00e9 peut retrancher environ 17 pour cent d&#8217;eau sans p\u00e9naliser le rendement commercialisable (AgriEngineering, 2025).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>La <strong>recirculation <\/strong>est la plus grosse \u00e9conomie structurelle. Recycler le drainage permet d&#8217;\u00e9conomiser jusqu&#8217;\u00e0 environ 25 pour cent d&#8217;eau et 35 pour cent d&#8217;engrais (Lieten), et un circuit ferm\u00e9 tourne 20 \u00e0 30 pour cent plus efficacement qu&#8217;un syst\u00e8me ouvert (Nam et al., 2024), tout en aidant \u00e0 g\u00e9rer le sel \u00e0 mesure que l&#8217;eau source se d\u00e9grade. C&#8217;est aussi plus exigeant sous un tunnel qu&#8217;en serre ferm\u00e9e, car il faut collecter, d\u00e9sinfecter et traiter, donc \u00e7a se justifie sur certains sites et pas sur d&#8217;autres.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Un chiffre \u00e0 laisser de c\u00f4t\u00e9: le fameux \u00ab jusqu&#8217;\u00e0 90 pour cent d&#8217;\u00e9conomie d&#8217;eau \u00bb. Il vient des l\u00e9gumes-feuilles en hydroponie recircul\u00e9e, comme la laitue en NFT (Barbosa et al., 2015), pas de la fraise sur substrat sous tunnel. Or, la plupart du temps, elle ruisselle et se perd. Un toit capte environ un litre par m\u00e8tre carr\u00e9 pour chaque millim\u00e8tre de pluie, si bien qu&#8217;un hectare de toit sous 800 mm de pluie annuelle peut intercepter de l&#8217;ordre de 8 millions de litres avant pertes. L&#8217;<strong>eau de pluie r\u00e9cup\u00e9r\u00e9e<\/strong> est naturellement pauvre en sel, ce qui convient aux hors-sol, et elle r\u00e9duit la d\u00e9pendance aux puits et au r\u00e9seau, au moment m\u00eame o\u00f9 ils sont sous pression. Un tunnel \u00e9quip\u00e9 de goutti\u00e8res de captation fait du toit une surface de collecte par conception. Une toiture gothique \u00e9vacue la neige et r\u00e9siste au vent, de sorte que la toile plastique et la culture passent les trois-saisons de culture. L&#8217;acier galvanis\u00e9 et le profil des tubes des arches prolonge la vie du film. Un bon d\u00e9gagement au fa\u00eete garde le microclimat stable et laisse passer la machinerie. Et des goutti\u00e8res con\u00e7ues pour r\u00e9cup\u00e9rer plut\u00f4t que seulement \u00e9vacuer int\u00e8grent le toit au syst\u00e8me d&#8217;eau. Un tunnel achet\u00e9 aujourd&#8217;hui doit performer dans le climat de 2050, pas dans celui de 2026. Des travaux revus par les pairs rendent ce futur tangible: bien des localit\u00e9s nord-am\u00e9ricaines devraient ressembler \u00e0 un endroit plus chaud et plus sec d&#8217;ici une seule vie de travail (Fitzpatrick et Dunn, 2019). Pens\u00e9 pour cet horizon, un grand tunnel avec goutte-\u00e0-goutte de pr\u00e9cision, stockage d&#8217;eau de pluie et, l\u00e0 o\u00f9 c&#8217;est pertinent, recirculation, n&#8217;est pas un luxe.
