Selon les producteurs du monde entier, il faut 75 000 fleurs ou 225 000 stigmates tri\u00e9s pour produire 0,5 kg de safran. Son prix actuel est donc de 30 000 (\u20ac\/kg) ou 16 500 (USD\/lb).<\/p>\n\n\n\n<p>Le nom &#8220;safran&#8221; est d\u00e9riv\u00e9 du latin safranum, lui-m\u00eame inspir\u00e9 de l&#8217;arabe &#8220;zafer\u00e2n&#8221;. Cette plante est originaire de la <strong>r\u00e9gion m\u00e9diterran\u00e9enne orientale<\/strong>.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/horti-generation.com\/wp-content\/uploads\/2021\/06\/artam-hoomat-OTGrOtistH4-unsplash-1024x683.jpg\" alt=\"This image has an empty alt attribute; its file name is artam-hoomat-OTGrOtistH4-unsplash-1024x683.jpg\"\/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p>Le safran est une <strong>plante d&#8217;hiver<\/strong>, sa fleur commence \u00e0 s&#8217;\u00e9panouir en novembre en Iran jusqu&#8217;en d\u00e9cembre. Les fleurs doivent \u00eatre r\u00e9colt\u00e9es t\u00f4t le matin car la fleur se fane rapidement dans la journ\u00e9e et les stigmates perdent leurs qualit\u00e9s. La <strong>r\u00e9colte est manuelle <\/strong>et s&#8217;effectue en plusieurs passages en fonction de la floraison. Cette plante est d&#8217;une grande valeur gr\u00e2ce \u00e0 ses<strong> 3 stigmates rouges <\/strong>tr\u00e8s visibles sur la fleur violette de la plante. Le safran vendu est compos\u00e9 de ces 3 stigmates rouges s\u00e9ch\u00e9s appel\u00e9s &#8220;filaments&#8221;.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2><strong>Conditions de culture du safran<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<p>Le safran est une <strong>culture d&#8217;altitude<\/strong>, en g\u00e9n\u00e9ral il pousse normalement \u00e0 des altitudes comprises entre 600 et 1200 m au dessus de la mer.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/horti-generation.com\/wp-content\/uploads\/2021\/06\/mohammad-amiri-L8B7-OAuP2k-unsplash-1-1024x683.jpg\" alt=\"\"\/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h3>&#8211; <strong>Temp\u00e9rature<\/strong><\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>La <strong>temp\u00e9rature optimale <\/strong>pour la floraison se situe entre 23 et 27 \u00b0C (ou 73 \u00e0 80\u00b0F). En revanche, certains chercheurs ont constat\u00e9 que l&#8217;apparition de la fleur n\u00e9cessite des temp\u00e9ratures beaucoup plus basses 17 \u00b0C (ou 63\u00b0F) d&#8217;apr\u00e8s (Molina&nbsp;<em>et al<\/em>., 2005a, b). La culture supporte de nombreuses temp\u00e9ratures tr\u00e8s rudes, pouvant atteindre jusqu&#8217;\u00e0 40 \u00b0C (ou 104\u00b0F) en \u00e9t\u00e9 et -15 \u00b0C (ou 5\u00b0F) en hiver. Le safran peut \u00eatre cultiv\u00e9 dans des r\u00e9gions comme le Qu\u00e9bec au Canada par exemple.<\/p>\n\n\n\n<p>En effet, la plante semble r\u00e9sister \u00e0 des temp\u00e9ratures extr\u00eames, la<strong> couverture neigeuse<\/strong> en Am\u00e9rique du Nord offrant une protection aux cormes.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3><strong>&#8211; Humidit\u00e9<\/strong><\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Les <strong>\u00e9t\u00e9s secs <\/strong>(faible humidit\u00e9 de l&#8217;air) sont g\u00e9n\u00e9ralement id\u00e9aux pour la culture du safran. En effet, les cormes sont plus susceptibles de pourrir dans les r\u00e9gions o\u00f9 les \u00e9t\u00e9s sont humides. Dans les r\u00e9gions humides, il est recommand\u00e9 d&#8217;assurer un drainage efficace du sol ou du milieu tout au long de l&#8217;ann\u00e9e.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3><strong>&#8211; Exigences \u00e9daphiques (sol)<\/strong><\/h3>\n\n\n\n<p><\/p>\n\n\n\n<p>Le safran a besoin d&#8217;un <strong>sol profond, l\u00e9ger, bien drainant et riche en mati\u00e8res organiques<\/strong>. Toutefois, la plante tol\u00e8re des sols jusqu&#8217;\u00e0 20 % de calcaire. Les textures argilo-calcaires, argilo-sableuses lui conviennent bien. Les sols trop sableux sont \u00e0 \u00e9viter. Les sols les plus fertiles facilitent la croissance v\u00e9g\u00e9tative au d\u00e9triment de la floraison. Les <strong>besoins en eau<\/strong> sont d&#8217;environ 650 mm par an. L&#8217;<strong>universit\u00e9 du Vermont<\/strong> a r\u00e9alis\u00e9 de nombreuses \u00e9tudes sur le potentiel de la culture du safran dans le &#8220;Green State&#8221;, afin d&#8217;offrir aux cultivateurs une chance de diversifier leurs revenus.<\/p>\n\n\n\n<p>La <strong>partie la plus laborieuse <\/strong>de la culture du safran est la r\u00e9colte et le traitement des stigmates. En comparaison, le cycle de culture est beaucoup moins exigeant (moins d&#8217;intrants ou low-input).<\/p>\n\n\n\n<p>Les chercheurs s&#8217;accordent \u00e0 dire que les <strong>serres individuelles (ou tunnel pi\u00e9droit) <\/strong>offrent une bonne protection pendant les hivers. Sa demande va fortement augmenter dans le monde entier dans les ann\u00e9es \u00e0 venir\u2026<\/p>\n\n\n\n<p>Le tunnel en hauteur ou la serre autoportante offriront une<strong> protection contre le gel<\/strong> et les al\u00e9as de l&#8217;environnement ext\u00e9rieur.
