En fait, pour ces deux usages, la teneur en vanilline est le principal objectif \u00e0 la fin du processus d&#8217;extraction. En effet, la <strong>concentration en vanilline<\/strong> d\u00e9termine le co\u00fbt des extraits.<\/p>\n\n\n\n<p>Aujourd&#8217;hui, il existe des technologies \u00e9mergentes utilisant la destruction physique ou chimique des cellules. En fait, ils standardisent leur processus avec une <strong>temp\u00e9rature sp\u00e9cifique<\/strong> (T\u1d52), une <strong>concentration de solvant<\/strong> (%v\/v) et dans certains cas la <strong>bonne pression <\/strong>(Pa). L&#8217;<strong>intensit\u00e9 <\/strong>(W) et la <strong>fr\u00e9quence <\/strong>(KHz) des micro-ondes affectent directement les gousses de vanille en augmentant les compos\u00e9s aromatiques dans le solvant puis dans l&#8217;extrait final.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-thr-acc-color has-text-color\">&#8211; <strong>Extraction assist\u00e9e par ultrasons (EAU) :<\/strong><\/p>\n\n\n\n<p>Cette technologie peut am\u00e9liorer le taux d&#8217;extraction et l&#8217;ar\u00f4me si elle est associ\u00e9e \u00e0 la bonne concentration de solvant. Les ultrasons cr\u00e9ent un ph\u00e9nom\u00e8ne de cavitation responsable de la destruction de la structure cellulaire des gousses de vanille, ce qui am\u00e9liore la quantit\u00e9 de mol\u00e9cules aromatiques. De m\u00eame, les conditions telles que la fr\u00e9quence (<strong>KHz<\/strong>), l&#8217;intensit\u00e9 (<strong>W\/cm2<\/strong>) et le temps (<strong>secondes<\/strong>) peuvent d\u00e9terminer la qualit\u00e9 de l&#8217;extrait final.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-thr-acc-color has-text-color\">&#8211; <strong>Extraction par fluides supercritiques (EFS) :<\/strong><\/p>\n\n\n\n<p>L&#8217;extraction par fluide supercritique est la plus co\u00fbteuse des technologies \u00e9mergentes, mais elle est \u00e9galement consid\u00e9r\u00e9e comme l&#8217;une des plus propres et des plus pr\u00e9cises en termes de mol\u00e9cules aromatiques. Il s&#8217;agit en effet d&#8217;un proc\u00e9d\u00e9 \u00e0 haute pression qui utilise du <strong>dioxyde de carbone<\/strong> (CO2) dans des conditions de temp\u00e9rature et de pression supercritiques. Les extraits SFE sont donc consid\u00e9r\u00e9s comme exempts \u00e0 100% de solvants chimiques. En outre, deux types d&#8217;extraits diff\u00e9rents peuvent \u00eatre obtenus, tous deux avec une <strong>concentration \u00e9lev\u00e9e de vanilline<\/strong> (<strong>> 12 %<\/strong>).<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2><strong>Conclusion<\/strong><\/h2>\n\n\n\n<p><\/p>\n\n\n\n<p>L&#8217;<strong>utilisation de technologies d&#8217;extraction \u00e9mergentes <\/strong>pourrait \u00eatre une bonne solution pour l&#8217;industrie des ar\u00f4mes. Malgr\u00e9 le co\u00fbt d&#8217;investissement le plus \u00e9lev\u00e9, cette expertise (en particulier le SFE) permet d&#8217;obtenir des extraits plus purs qui sont plus chers sur le march\u00e9.
