The growers are using volcanic rocks on the ground to dry the air avoiding also water accumulation on the floor.
Moreover, the greenhouse size (large volume) and passive ventilation on the roof help to renew the air extracting out the excess humidity. In fact, this system creates optimal growing conditions for hydroponic vanilla cultivation. There are much less risks of fungi cultivation.
The main issue I have seen in French Polynesia (Tahiti) was more the mealybug contamination… but a proper IPM strategy will be the best preventive / curative options.
